JR Langit: You’re not a Filipino?
Lisa: No I’m not a Filipino, I’m Chinese.
JR Langit: Is this your first time to eat Señor Sisig?
Lisa: My first time to eat Señor Sisig. It looks delicious. It’s good. I like the sauce and the meat. It’s good. I would definitely try it again If I see it around.
Rey Langit: Is this your first time to taste Señor Sisig?
Steve: It is, but I heard it before then, and I’m very much enjoying it. I had it with the egg. Yeah it’s very good. I highly recommend it.
FOOD TASTING TRIP

FILIPINO FOOD TOURISM
Pagkain ang isa sa mga pinaka-epektibong paraan upang makilala ang kultura ng isang bansa Kung kaya naman, ngayong nau-uso ang pagta-travel lalo na sa mga millennial. Usong-uso rin ang tinatawag na gastronomy tourism o food tourism.
Ngunit alam nyo ba na ang mga taga-San Francisco sa California, USA, ay hindi na kinakailangan bumiyahe pa ng malayo upang matikman ang masarap nating pagkain? Dahil ‘yan kay Gil Payumo, ang Pilipinong may-ari ng Senor Sisig.
JR Langit: Mga kaibigan narito po ang isang Pilipino, na bagamat siya’y matagal nang narito sa Amerika si Gil ay anak ng both Filipinos, isang taga- Quiapo at isang taga-Canlubang. Anong exactly itong negosyo mong ito Gil?
Gil: Actually I’m running a catering truck, it’s a Mexican-Filipino fusion truck, Señor Sisig, actually we developed this about close 3 years ago, me and my partner Ivan, he came to me with a concept, of doing a truck and I propose the food and the whole type of food I wanted to sell. So that’s how we came to sell Señor Sisig.
Dahil sa impluwensya ng kanyang ama na may lahing kapampangan, likas kay Gil ang pagkahilig sa pagluluto.
ARO KAPAMPANGAN YAHH!
Rey Langit: We came from the same Province, I am also Kapampangan and love kapampangan food so much.
Gil: Kapampangan is really known for cooking and everything they really like to be in the kitchen, regardless if they’re doing it for a living or doing it just for fun or its just what they want to do and I think I carried that throughout the years growing up in a Filipino household you know.
JR Langit: Did you go to a formal culinary school?
Gil: I “nished out culinary school, I got my certificate for doing culinary, La cour on Blue certificate so I “nished the culinary and I had a lot of experience in the kitchen cause I’ve been working in the kitchen for 5-6 years already so I’ve been jumping here and out with hotels, restaurants, so you know something like this is not far from what I used to do. I’m really into the food aspect, my business partner is really into money aspect. So it’s a good balance. You know we have a fair amount of duties with the business.
SEÑOR SISIG AT THE BAY AREA
Kung gusto ninyong matikman ang kanilang Senor Sisig, madaling hanapin mag tungo lamang sa San Francisco Bay Area at siguradong mag iinjoy kyo sa mga Pagkaing filipino.
JR Langit: Kanino yung title na Señor Sisig?
Gil: A little bit of both of ours, you know it’s a combination of ideas you know. We brought together, me and my partner Ivan. So Senior on the Mexican side, Sisig on the Filipino side. So we combined it more like a fusion kind of catering truck.
Gil: the whole trend is really popular, the food truck trend not only that, just trying to get the Filipino food out there slowly, that’s why I did something like a fusion truck so people could recognize the Filipino cuisine, not only just bringing out there Filipino but Filipino-Mexican because Mexican food is really popular here, in the bay area.
DIFFERENT NATIONALITIES
JR Langit: So in other words itong Filipino cuisine na ito ay accepted na rin ng ibang nationalities? Accepted ng mga Mexican, accepted na ng mga puti?
Gil: Of course, they’re very skeptical and they want to know more about it. But just the flavor itself once they’ve tried it they’re gonna want to know more about it. And want to know what’s inside , you know the food so that’s what I mean in having the Filipino cuisine brought out to not only to Filipinos but you know other nationalities and have them more educated about it.

JR Langit: What’s your name again please?
Lisa: I’m Lisa.
JR Langit: Lisa you’re from?
Lisa: San Ramon, San Francisco Area.
JR Langit: You’re not a Filipino?

Pork sisig, tofu sisig, silog meals at iba pang pagkaing Pinoy, yan ang ipinapatikim ni Gil sa kanyang Senor Sisig fusion truck.
Gil: we do silogs, and you can add an egg to anything you want on the menu, a taco, a burrito especially on rice plates, we have several specials like on Thursdays we do tosilogs Thursdays, Tosilog burrito, we put a tosilog plate, garlic rice, tocino, tomato, and a fried egg inside a burrito so you could have a rice plate all in one. You know we do that special days, we try to put out diherent kind of menus throughout the week.

Rey Langit: Do you also carry the other type of Silogs…. tapsilog, tosilog, longsilog which are common and very known in the Philippines?
Gil: Yeah what we try to do is to bring out once in a while for special but our main focus is sisig, you know. Not only like of course, there’s pork sisig, but we also have chicken sisig, and we also make tofu sisig, so tofu sisig is more for the vegetarians out there that cannot eat meat, cannot eat chicken, so it gives them a good balance… just trying to embrace the whole you know foodies out there, and people that really enjoy food. We try to be more welcome to everybody.
Bukod sa pagpapakilala ng ating kultura sa pamamagitan ng pagkain, ilang kababayan rin natin ang nabigyan niya ng trabaho.
JOB FOR THE FILIPINOS IN AMERICA
Rey Langit: Ilang mga Filipinos and nag wowork sayo dito?
Gil: In my staff we have staff of 8 and around 6 of them are Filipino. 90% of our employees are Filipino. So we tried to keep it very true Filipino, to the food and at the same time a good friendly family environment.
Bago, nakilala ang Senor Sisig, aminado si Gil na marami-rami rin siyang pinagdaanan subalit para sa passion at pangarap, kanya itong pinagtiisan at hindi nagtagal ay nalampasan.
Gil: The challenges is just understanding the business, trying to get into a small business, of course, trying to get the money, to start up the business, just getting to know, it’s a day by day you know, you learn every day, what things you could make your business better. What things you could change to make it easier for you and right now its small that’s ongoing struggle, trying to make it easier for you, trying to make it easier for the business, but at the same time not spend your money, unwisely.
INFLUENCE OF FILIPINO CULTURE
JR Langit: Your objective is not only to earn, it is not only about profit… your mission is something, even greater.
Gil: I wanna make sure everyone out there knows what I’m trying to do, not only for you to know us- as the Filipino community but you know I’m also trying to support everybody not only the cuisine but my culture, our culture. Trying to make everyone understand that you know I’m doing something for everybody. And having said that, I am hopeful it can be successful than what it is now. And I just want every one’s support. You know, just trying to support us not just trying our food, but read about us, watch us and everything like that.
